Sendmail.

Having been down the sendmail road and finding it lacking. I recommend 
using Exim (or postfix, or qmail as second choices) as it is the easiest 
to configure, quite flexible (RBLs are a snap), has great documentation 
and one of the best mail lists I've seen.
